The original kitchen has been preserved, with its monumental fireplace and 5 metre high stone vault, its equipped with the most modern material. A refined cuisine, with an emphasis on local products. The adjoining sitting room and the lounge area near the bar welcome you, opening onto the majestic courtyard and terrace, fountain and a magnificent view overlooking the gardens and the castle park.

F R É D É R I C K  P E L L E T I E R

We are pleased to introduce Frédérick PELLETIER, Chef of our restaurant “La canopée”. Passionate and meticulous, he wishes to share with you his vision of cusisine, subscribing to the careful line of the Castle.

A recipient of the Gault & Millau Jeunes Talents Award in 2006 in Corsica, Frederick PELLETIER has studied in many renowned hotels such as the Hotel La Poundmaker****** in Calvi, the Mas de la Fouque***** in Saintes-Marie-de-la-Mer and Le Castellas**** in Collias. He was also trained in the kitchens of Michel KAYSER (Alexandre Restaurant 2 star in Garons).
